Fridays are not only great days to take a big breather after the long week (phew!), but also good times to bake something yummy to enjoy over the newest episode of Desperate Housewives. One of my favorite treats to enjoy when I'm in need of food therapy is a chocolate chip muffin. I just love the way gooey chocolate tastes when paired with baked muffins - yum! Doesn't the thought of it just get you? Without further ado, here's an adapted recipe that I always stay true to when baking muffins...
(Makes 12-18)
Ingredients
-2 cups all purpose flour
-1/3 cup white sugar
-1/3 cup light brown sugar
-2 teaspoons baking powder
-1/2 teaspoon salt
-2/3 cup milk
-1/2 cup butter (melted and cooled)
-2 eggs (lightly beaten)
-1 teaspoon vanilla extract
-1 (11 1/2 ounce) package milk chocolate chips
-1/2 cup walnuts (chopped)
Steps
1. Preheat the oven to 400 degrees Fahrenheit. Grease 12 muffin cups. In a large bowl, mix together flour, white sugar, brown sugar, baking powder and salt.
2. In another bowl, stir together eggs, milk, butter and vanilla until well blended. Make a well in the center of the mixture, then pour the milk mixture into the well and stir until combined.
3. Spoon batter into muffin cups and place on a baking tray. Place the tray into the oven and bake for approximately 15-20 minutes or until a toothpick comes out clean. Allow muffins to cool for 5 minutes; enjoy!
